Cold Salmon Sushi Bowl

Ingredients:
- 450g skinless, boneless salmon
- 2 tbsp teriyaki sauce
- 1.5 cups cooked brown rice (or 3 pots)
- 1 lebanese cucumber
- 1 avocado
- 1 carrot
- 3 lime wedges
- Sriracha mayo
- Sesame seeds
Method:
- If using an oven to cook the salmon, preheat oven to 200 degrees celsius
- Cut the salmon into 1-2cm cubes and marinate with the teriyaki sauce
- Cook salmon in an air fryer for 15 minutes on 180 degrees or 15 minutes in an oven on 200 degrees
- Slice the cucumber and avocado and grate the carrot
- Assemble the bowls with brown rice, marinated salmon, grated carrot, cucumber, avocado and lime.
- Top the salmon with sesame seeds and sriracha mayo
Keep in the fridge for up to 3 days
