School lunches made easy!

Thinking of creative lunch ideas for the kids isn’t always easy. You want it to be healthy, they want it to be delicious and you both want it to be easy (not to mention edible).  Whether it’s to satisfy the kids during school holidays or to keep their brains fuel for their school day, we’ve got options that kids, big and little are bound to love.
 
Rainbow wraps

These tasty wraps are as fun to say as they are to eat.  Full of nutrients all whilst being delicious and easy to make!  You can probably teach you
r kids to make them.  All the ingrediants can be purchased at Rouse Hill Town Centre (try Martelli’s Market for the freshest produce around!)
 
Ingredients
225g can sliced beetroot
4 spinach and herb wraps
50 baby spinach
90g (1/3 cup) chargrilled capsicum, halved
1 large carrot, grated
60g feta, sliced

Assembly

Pat beetroot dry with paper towel remove excess moisture
Place wrap on a flat surface. Arrange ¼ of the spinach, capsicum, carrot, beetroot and feta
 
Berry and apple bircher muesli

It seems like everyone I know is obsessed with breakfast at any time of the day, including my 6 year old niece.  Make lunch fun with a breakfast theme starting with bircher muesli!
Here’s what you need:
2 tablespoons untoasted muesli
1/3 cup berry yoghurt
¼ apple, grated
¼ fresh berries
Sunflower seeds to sprinkle on top
 
Once you have the ingredients, making the dish is easy!  Combine the muesli, berry yoghurt, apple and berries then sprinkle with sunflower seeds and voila bircher muesli!

Money saving tip: Buy frozen berries from Aldi, let them thaw and use in your muesli over fresh berries!

A super easy fav for kids of all sizes – Banana and peanut butter sandwich.
You probably won’t even need to shop for this one as long as you have peanut butter, wholemeal  bread (our favourite fresh bread is Chia Omega-3 wholemeal block loaf from Bakers Delight), banana and honey in the house!  Slice up the banana, spread it on the bread, add a drizzle of honey and lunch is ready!
 
Too busy to cook?  Martelli’s Market has tonnes of ready-made dishes perfect for lunches all made on site! Quiches, wraps, salads, fried rice and nasi goreng! Or make a quick stop at Bush Meats for some sliced meat and Bakers Delight for sliced bread and lunch for a week has practically made itself!

One last little treat that we couldn’t not include: Blueberry & cream cheese toasty (I know.) Pick up a Cinnamon and Fruit Loaf from Bakers Delight, 1 punnet of blueberries from Woolies, 50g of cream cheese and 2 tsp of icing sugar and butter to taste!

Combine the cream cheese and the icing sugar. Spread the cream cheese mixture on to a slice of the Cinnamon and Fruit Loaf and add blueberries.

Spread a little margarine or olive oil spray to the outside of both pieces of bread so you get a lovely golden colour when toasting.

On a low to medium heat, add the sandwich to a pan to toast. Turn the sandwich over once you have reached your desired level of toasting.

Remove from the pan, slice and finish with an extra sprinkling of icing sugar.
